One of the goals I made for this summer was to learn how to cook seafood. Now given the range of seafood I love and keep learning about, I realize this may be more of a six-month goal. Nonetheless, I am finding it fun and I feel I have co-conspirators encouraging me when I go to the seafood bar at the grocery store. They are very supportive and always want to hear what I have made!

Today has been such a happy day, with a wonderful surprise. My mom and good friend stopped by to see me unexpectedly. I had not checked my messages so it was a complete surprise! We had a great time despite the heat and I am still grinning ear to ear, hours later! Thankful and very happy!! Made my day!

For dinner, I decided to cook some fish and chips, one of my favorite foods as a kid. I wanted to give it a shot. I am happy with how it turned out, and I can see how there can be many variations on this!

I got haddock for the fish and cut the potatoes in wedges. I added some juniper leaves for Vermont and then some malt for Scotland. It tastes SO good! I like it with cod too, but I think haddock tastes better. Yum!
